Corn, Peppers, and Onions

P1040156Nothing complicated or complex here. Just a simple and tasty side dish!

Colorful and savory, it’s  one of my favorite ways to prepare corn to go along with dinner.

It takes just a few minutes and uses whole ingredients. (perhaps you have some of these growing in your garden this  year!)


  • Extra Virgin Olive Oil
  • 1 12 oz. package frozen corn
  • 1 green pepper, diced
  • 1/2 of a whole medium-sized onion, finely diced
  • Sea Salt
  • Ground Black Pepper

Heat 2 Tbs of oil in a pan. Pour in frozen corn, diced up green pepper and diced onion. Sprinkle with 1/4- 1/2 tsp. black pepper and 1/2- 1 tsp salt (to taste!). Cover and saute on medium-high heat just until the corn is fully heated through- about 10 minutes- stirring occasionally. For an additional minute or two, uncover and turn the heat up, allowing the corn to get slightly “charred”. Remove from heat and serve.
